Nikolas and Carolin Bantlin’s love of Jim Morrison inspired the name of this cuvee. Cool Moon is a delicious white wine from old vine Grenache Gris and Grenache blanc. It’s a beautifully well- balanced wine perfect for the summer!

It has a beautiful light yellow colour, with flavours of mandarin citrus, apple and fresh herbs. On the palate the wine is well balanced between some fatness and a great acidity backbone. Notes of lychee fruits are easily recognizable. The finish is spicy and salty.

After a busy life working and living in a big city, Nikolaus and Carolin, both German, decided to start a new life in France. They bought in 2001 a domaine located 30 km north of Perpignan, near Fitou. They started with the help of Olivier Pithon who lent them a part of his cellar for their first vintage.
The vineyards are on limestone soil and are all grouped in two plots of land in the midst of natural wild "garrigue" vegetation. The total area is 12 hectares, of which 8 are cultivated at present.

Their project is to farm the land without damaging it creating a balance between what is taken from the land and what is given to it; understanding and respecting the rules of the earth and the cosmos.

Since a long-time Caroline and Nikolaus loved to spend holidays around Fitou and start thinking to move from Germany to south of France definitely. After the birth of their second son they finally found the perfect living place, with 7,5 ha of vines. After a lot of thoughts, they decided to drop their professional life in Germany and make wine. They start to work with the cooperative of Sales. In 2003 during an internship at Domain Olivier Pithon, they took the decision to make their own wine with the help of Olivier Pithon. Since then there became well known and successful.
