Fruity, elegant red wine exhibiting lots of garrigue, fresh red fruits and black cherry liqueur characteristics. The mouth is medium-body, delicate, elegant and so fresh. Fine tannins.
Grilled meats with roasted potatoes.
Gneiss and schist some with granitic sand.
Biodynamic farming. Sorting in the vineyards. Ploughing is done by mule. Hand harvest in small basket.
Grapes are fully destemmed. Fermentation with wild yeasts in concrete tanks for 8 to 20 days. Pumping over for soft extractions and for keeping the fruit. Ageing in 1 and 2 wines barrels. 'Low-or-no' sulphite rationale.
Tribouley – an outsider (he was a social worker in his previous life) who understudied with Gauby and then began his own estate in 2002 – farms roughly 15 hectares biodynamically in the heart of the fabulous terroirs of the Roussillon in Latour de France. Yields are very low. He is a non-interventionist in the cellar. Jean-Louis likes to say that he lives from the earth while respecting it. His goal is to produce a "sincere" wine, respecting the vintage and the terroir.
