Tasting notes

Delicious ripe dark fruit, leather and pepper notes on the nose & taste. Intense and full-bodied, yet perfectly balanced. Nice tannins, smooth finish.

Production


Vinification

Grapes are vinified separately. Cold pre-fermentation maceration with daily pumping over. Fermentation in tank with indigenous yeast for 21 days. Ageing in stainless steel tanks for 5 months on lees.

Viticulture

Responsible farming. Gobelet pruning. Hand harvest.

Terroir

Clay-limestone, stony, rich with iron oxyde.

A restaurateur and wine writer in previous lives, Hervé Bizeul practices a ruthlessly controlled viticultural regimen in the dramatically rocky, yet clay-permeated limestone environment north of Vingrau. Add to this a fruit-pampering vinification, and the result is wines that have turned heads every bit as much as does the local scenery and brought Bizeul well-deserved recognition as a beacon of Roussillon quality.
