This wine is rich with a soft texture, balanced by a nice freshness. Very good ageing potential.

Pear, fresh peach, honey, liquorice, acacia on the nose. The palate is fat and rich, with bursting aromas of candied fruits, honey, almond and orange peel. Some nice acidity on the attack and some bitterness in the finish balance the wine. All suggest a magnificent potential over the years.
Pan-fried scallops, cod with tomatoes, sea bass with fennel, monkfish with bacon, poultry with honey.
Clay and limestone pebbles
Organic farming. The soil is ploughed. Green harvest. Hand harvest.
Fermented on natural yeast and aged for 6 months in oak barrels.
Xavier Braujou started his life as a woodcutter. But his real passion was wine. He started La Terrasse d’Elise in 1998. His vines and wines are cared for as naturally as possible, with minimum treatments in the vineyards, and with no fining, natural yeasts and very little sulphur used in the winemaking process. Xavier’s specialty is to blend terroirs from a same grape variety to best express its character. Although 85% of Xavier’s land is within the Appellation, all his wines are labelled as Vin de Pays because they are mono-varietal and thus do not comply with the local AOC.
