Aromas of white fruits (pear, white peach), candied lime peel, flowers and some nice grilled notes. The effect of the wood and enrichment of lees bring a rich and full palate, but with a sense of refreshment. The wine finishes long with a saltiness feeling, which is very stimulating.
Shellfish, spicy food (Thai curry as example).
Marl and schist at 300m high.
Sustainable farming. Short pruning, ploughing between rows, hand harvest.
Whole bunch direct pressing. Fermented with indigenous yeasts in concrete, stainless steel tanks and barrels. Ageing 7 months on lees in egg‐shaped concrete tanks (Macabeu) and one‐wine oak barrels (Grenache gris). No fining and light filtration.
Aker a stint in Bordeaux, Dimitri Glipa moved in 2005 to the vineyards of Roussillon, in the highly coveted, rugged and dry area known as Fenouillèdes. Like many talented winemakers in the area, Mas Mudigliza produces wines from the best terroirs with alHtude and from old vines that impress with their intensity, mineral complexity, purity, freshness and generosity. The farming is organic and Dimitri works the soil by hand. His yields are ridiculously low, but it is the only way to give his wines the level of concentraHon and complexity he seeks. Dimitri keeps his wines very reasonably priced. As the RVF once wrote: “Dimitri is a great winemaker who produces wines that never disappoint.”
