Vacqueyras blanc is a rare wine. Aromatic, clean and nicely textured, it is nicely balanced. It will be versatile on the dinner table.

It has a lively, medium-bodied, mineral-laced style to go with pretty notes of yellow plum, citrus and mint.
Appetizers, Mediterranean food such as red mullet and cold starters (tomato, eggplant, basil, olive oil…), tomato-mozzarella salad or poultry in a cream sauce.
Clay-limestone, pebbles, sand
Organic farming. Hand harvest. Grapes are picked and placed in 15kg cases in order to avoid premature crushing and oxidation.
Cold pressing. The wine is fermented in stainless steel tanks and barrels and the juice rests on the lees until bottling in the spring. Daily lees stirring.
Domaine Les Ondines is situated in the heart of the Vacqueyras appellation. The family has grown grapes for many generations but Jérémy is the first to make and bottle the wine at the estate.
Starting in 2008, Jérémy has farmed his vineyards inaccordance with the principles of organic farming. Yields are kept exceptionally low. in In the cellar he applied traditional techniques, using q little bit of oak, giving a fresh and pure fruit character to the wines.
