This Vacqueyras brings ripe fruits and great complexity in a fresh, supple and easy drinking style.
"The meaning of this cuvée (The Brother's clos) came from someone i met when i just started. Now he is more than a brother to me. When i start working in the wine industrie, this person stoped his political carier in Belgium and wanted to help me. As I didn't had any customers yet, he helped me to find some thought his huge acquaintance network.
Furthermore he bought a house with a small land next to mine, and i planted some vines there under the Vacqueyras appellation. This plot is surrounded by oak-trees which explain one part of the name. Aromas of black pepper dusted berries, spice and dried herbs. On the palate we find crushed rock-like minerality, ground herbs and both black and blue fruits. This top cuvee Vacqueyras is medium-bodied with a solid mid-palate depth and good all-around texture and freshness.
This wine is to recommend with game or meat sauce.
Sandstone and limestone
The estate, created in 2003, is located at the South part of Rhône Valley on the Sarrians’ Garrigue plateau. The 57.5 Ares offer 4 different appellations including 3 colors in Vacqueyras. In 2009 the estate became officially organic.
There is 7 Ares clay-limestone with rocks soil which allowed the Grenache grapes to fully express itself.
The first white grapes were planted in 2002 and 2005, now the estate can produce high quality Vacqueyras white wine, which is uneasy to find in Japan. The estate is mainly made of Grenache (50%) and Syrah (30%) but there is also some Cinsault, Mourvèdre, Roussanne, Bourboulenc, Viognier, Grenache blanc et Clairette.
The wine making process
Jérémy doesn’t use any chimicals in his cellar, neither in the vineyard to let the grapes and the terroir express itself as much as possible. In 2015 the estate purchase wooden and stainless-steel cone-shaped tank, which allowed to make a plot vinification.
Before fully dedicate himself to making wines Jérémy was working as head of marketing in a French famous cloth brand. As the call of the countryside was too strong to ignore, he left everything to dedicate himself to Domaine Les Ondines (that he created himself). The passion starts when he used to carry his father’s grapes to the magician, who bought everything, and helped to the wine making process at the cellar.
