Tasting notes
Intense, complex and delicate dark fruit bouquet with some note of roasted coffee. Beautifully rich and pure fruit on the palate and soft tannins providing a superb structure to the wine. The balance between the richness and the freshness and minerality of the juice is perfect. The liveliness of this wine is just magic.

Oyster! Or red snapper, pork shoulder, hard cheese.

Viticulture
Organic farming. All viticultural work done by hand. Hand harvest.
Vinification
Traditional fermentation in demi-muids for 30-40 days. Indigenous yeast. Ageing in old wood barrels for one year without lees stirring. No fining nor filtering.

Winery Description
Wilfried Walt, a former student in biochemistry in Montpellier and in oenology in Dijon, started his domaine in 2007. He bought 5 hectares of old vines about to be uprooted near Calce, at the Done pass (Col de la Done). His farming is organic, respectful of the environment. His winemaking is modern, with cold pre-fermentation maceration and soft extraction. Wilfried is implementing in Roussillon, to local grapes (Carignan, Mourvedre), what he has learnt in Burgundy while working at Meo-Camuzet and Joblot. The results are fresh, delicate and elegant wines.
