Tasting notes

Fruity, elegant red wine exhibiting lots of garrigue, fresh red fruits and black cherry liqueur characteristics. The mouth is medium-body, delicate, elegant and so fresh. Fine tannins.

Pairing

Grilled meats with roasted potatoes.

Terroir

Gneiss and schist some with granitic sand.

Viticulture

Biodynamic farming. Sorting in the vineyards. Ploughing is done by mule. Hand harvest in small basket.

Vinification

Grapes are fully destemmed. Fermentation with wild yeasts in concrete tanks for 8 to 20 days. Pumping over for soft extractions and for keeping the fruit. Ageing in 1 and 2 wines barrels. 'Low-or-no' sulphite rationale.

Winery Description

The estate was created in 2002 with 8 hectares at Latour de France appellation. Today there is 13 hectares of vine within the appellation of Côtes du Roussillon Village Latour de France.

The Terroir
Located close from Perpignan, the soil is dry and stony.

The vines
The grapes varieties are: carignan, Grenache, Syrah, Maccabeu and Grenache gris. 40% of the varieties are 30 years old and the rest is up to 50 years to 70 years old.

The Vinification
From the very beginning, Jean-Louis banished chemicals in the vineyard and in the winery. the vinification is done naturally. During the harvest the grapes are clean and beautiful which allowed Jean-Louis to step in the vinification as less as possible. Sulfites are used a very little or not at all. No filter applied. This way of making wine enable grapes to express itself naturally with full potential.

Jean-Louis Tribouley
Graduated from a Viticole High School, he studied wine making with M.Gauby. Jean-Louis likes to say that he lives from the earth while respecting it. His goal is to produce a "sincere" wine, respecting the vintage and the terroir.
