Tasting notes
Garnet cherry wine of medium high intensity. Arom as of ripe fruit, plums, blackberries, green figs, some lavender with a cocoa finish and hints of cherry. The mouth entry is gentle, It is structured and powerful, with a perfect balance between acidity, alcohol and wood, showing a very ell tuned assembly, with an elegant fullness.

Vinification
Whole grain. 20% of the whole bunch with the stems. Prefermentative cold maceration for 4 days to 12ºC for the extraction of aromas Fermentation at 22ºC in stainless steel tanks, with native yeast and looking for respect and the typicality of the raw material. Spontaneous malolactic fermentation in foudres of 600-liters french oak barrels. Aging for 14 months in 600-litres used French oak barrels from Sylvain and Quintessence of two vintage.

Winery Description
Parajes de los Vidrios is located in the heart of the Sierra de Gredos. The combination of the wisdom of Miguel Santiago (5th generation of winegrowers in the region) in the vineyard, the oenological knowledge of Manuel Manzaneque and the commercial experience of Aseuniv, constitutes this great project of creating fine and elegant Madrid wines.
In the cellar, they work with the greatest consideration for the raw material, thus seeking honest wines that reflect their origin and the identity of the terroir.
The vineyard is located between 800 and 920 meters above sea level, with Garnacha and Albillo plants aged 60 to 100 years, and poor soils (sandy and granite) are plowed on horseback.
Ecological and biodynamic viticulture is done with total respect for the environment and natural materials such as sulfur and copper are used.
