Tasting notes
Dark robe; the nose bears blackberry fruits, notes of smokiness/bacon and some complex spiciness. It is medium to full-bodied, ripe, with tons of fruit and a silky texture. The tannins are well rounded.
Pairing
Steak with a black pepper sauce, beef or lamb stew, venison and hard type cheese.

Organic farming. Hand harvest.
Vinification
All grapes are destemmed but not crushed. The fermentation takes place in stainless steel vats and lasts 3 weeks. The malolactic fermentation takes place in 500l oak demi-muids. Ageing for 18 months in demi-muids (35% new).
