Fresh fruits and floral notes. The palate is fresh and lively with soft tannins.

Terroir

Clay and chalk.

Viticulture

Ancestral methods, without chemical weeding and synthetic products. Manual harvesting, transport of grapes in small crates, sorting on systematic table at reception.

Vinification

Fermentation in thermo-regulated stainless steel vat. No pigeage, gentle work for extraction of juice and colour then ageing in oak barrels during 12 months. 20% in new oak barrels, 20% in barrel of 1 wine, 20% of 2 wines, etc. Then aging in vat for 4 to 6 months. Bottled on the estate, without fining and filtering.

Winery Description

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.

The estate is 12 hectare wild, which 7 hectares are for red wines.

Antoine strives to works its vines in accordance with his convictions, to work seriously without taking himself seriously.
