Tasting notes

Floral, fresh, woody and refined aromas rise to the surface. On the palate, a mineral attack, fresh and fruity. The structure is firm but the oak rounds it out. Elegant and very well balanced.

Viticulture

The fruit is hand-picked and sorted at the same time. 35-year-old Chenin vines planted on a southeast-facing hillside at 350 metres altitude. The Chardonnay vines are 25 years old and are planted on a steep southeast-facing slope.

Vinification

Sorting by parcel. Pressing and debourging. Fermentation in oak barrels, stirred regularly. Aged for 9 months in 600 litre French oak barrels. New oak used for Chardonnay.

Winery Description

The adventure starts like a fairy tale: once upon a time a small vineyard of old carignan was about to be replaced by beehives…

Plo Roucarels means small rocky plateau in occitan. It is run by two young and passionate wine makers, Julia Hubrich (from the former East Germany) and Julien Gil. This domain is located a few kilometers from the medieval citadel of Carcassonne, near the Pyrenees mountain range.

The climate
The vineyard is located at a climate crossroad. There is the Mediterranean climate and the Oceanic climate, which provide different kind of winds and make the grapes grows in exceptional conditions.

The terroir
Under the Oceanic influence the cabernet sauvignon brings complexity and strength to the wines. Sandstones and marl of the Carignian combine to this Oceanic influence brings to this exclusively Mediterranean grape variety a unique subtility, spices and freshness.

The vineyard
All chemicals are strictly limited. They don’t use it only if it’s necessary. They check the weather and inspect for any parasites frequently.
They use a natural mixture based on humus and oligo-elements to fortify the grapes and galvanize the soil eco-system.

The vinification
The vinification is as natural as possible. The harvest is scrupulously checked: no leaf, no snails, no dry or rotted raisins.
Every grape variety is vinified separately without adding any yeasts.
Red wines are neither filter nor sticked.
