Tasting notes
It has a nose of morello cherry and smoke above all. The wine is charming, with a fresh note of liquorice and rose on aeration.
Tender and fruity, greedy and flowing in the mouth. The fruit flavours are wrapped in a crunchy, peppery tannic structure on the finish.
Vinification
The grapes are sorted and completely destemmed. The "Les Genevrières" cuvée is fermented naturally in vats for about 3 weeks with daily punching downs and possibly pumping over to encourage fermentation. This wine is aged in oak barrels for 12 months (20% new barrels) before bottling.

Winery Description
Domaine Patrick Hudelot is located in Villars-Fontaine, Burgundy. The first viticultural activities of the estate date back to the 1950s, even if the real launch of the property only took place in the 1960s. It has only been owned by Patrick Hudelot since 1980.
The vineyard extends over 22 hectares of vines and since 2000 the estate has been under organic farming in order to offer healthy, fresh and straightforward wines. The grapes are harvested by hand.
The Domaine Patrick Hudelot is one of the biggest references in Burgundy, notably thanks to its wide range of choices from all the region's finest appellations. Any lover of great Burgundy wines will find wine here to suit their discerning taste buds.
