Tasting notes
A lighter style Cahors, with juicy black plum and blackberry notes. Intense red fruit, peppery expression and earthy minerality. Medium body, sappy acidity. Well-integrated tannins that linger on the finish. A really pure, bright young wine.

A satisfying companion to charcuterie, chicken and even grilled steak.

Organic farming. Hand harvest.
Vinification
The grapes are pressed with 10-20% whole clusters; the juice ferments at cool temperatures with indigenous yeasts in cement tanks with a 10-to-12-day maceration. The wine is aged in cement through the winter and bottled in the spring.

Winery Description
This family estate of 22 hectars was established in 1998 by the impulse of Jean-Pierre ILBERT. Jean-Pierre is now retired but his son, Julien, joined his father in 2003. Now Julien and his wife, Sophie, took over the estate and together they are improving years by years the quality of wines (plots selection, working with a bigger sense of terroir to reflect the impact and the importance of the soil in the wine).
In 2013 they start the transformations to get the Organic Label.
