Le Rocher des Violettes - Pinot Noir 2021
Xavier has always wanted to make Pinot Noir. The problem was that there were no Pinot Noir vines in Touraine. So he decided to plant some himself. He chose a selection of old vines in Pommard, in the Clos des Epneaux, and planted them on the clay-limestone soil of the Grand Poirier plot. Vinification takes place in truncated wooden vats and always includes a portion of whole grapes. The wine is aged in barrels for one year.
Since the first vintage (2014), the progress of this cuvée has been remarkable. Not only because of the ageing of the vines, but also because Xavier has learned to master his plots, to refine and mature them accordingly. Xavier has learned to master his plots and has refined his vinification and ageing accordingly.

Tasting notes
This infused Pinot Noir has a fine nose, with a lovely fruity, delicate expression of Morello cherry, and is delicious on the palate, with silky, well-established tannins that add voluptuousness and great depth.
Pairing
Duck confit or Flemish-style beef carbonade, great tasting red meats.

Winery Description
The vineyard covers 13 hectares wide including 9ha in Montlouis sur Loire AOC and 4ha in Touraine AOC, in the districts of Saint-Martin le Beau, on the north side of the valley of the Cher, a small village near Montlouis sur Loire.
All plots are very fragmented and heterogeneous, both in terms of the age of the vines as the soils and grape varieties
Most parcels were planted before 1940 and has already celebrated 120 years old! The benefit of old vines is that they regulate themselves: quality and quantity of wines is more regular, including "small vintages" (when a vintage is complicated).
