Tasting notes
Symphonia wants to amalgamate the floral scents typical of the Combai area with the vibrant notes of the Caneva foothills. The geological profiles, altimeters and types of grapes, give aromatic complexity; white flowers, apple, yellow fruit, with notes of small red fruits. The low residual sugar enhances the purity and aromatic precision.
Pairing
Excellent as an aperitif or fish dishes, even raw, and various cured meats; excellent with the proscitto of San Daniele
Viticulture
Grapes from Miane (vineyards in Combai and Campea); Caneva; vineyards in a flat and hilly area.
Vinification
The harvest takes place in stepts, depending on the varieties. It begins with the Caneva chardonnay, (beginning of September) and continues with varieties in Miane and, in the end, Pinot Noir. The grapes are softly pressed; the musts are brought to low temperatures and cryomacerated to obtain a better extraction of aromas. The wine is transformed into sparkling wine using the Charmat method, with a fermentation of about 40 days.

Winery Description
The Balan company was founded in 1962 by a very young Sergio Balan, who thus put to good use the knowledge gained working with his father Giuseppe and his grandfather Jeremiah: both had various agricultural activities, but were known above all as, we would say today, specialized courtiers in the wine sector. During the First World War, Giuseppe, who left for the front, could not take care of the family business. At that time his wife Rosa Stella played a decisive role in the stability of work and the maintenance of relationships built by her husband.
Sergio began his activity in the garage of his house, which is still in front of the main company headquarters, in Sant'Ambrogio di Trebaseleghe, whose construction began in 1966. Since then Sergio Balan has gradually assembled structures, rows and connoisseurs to expand the company to transform it into the current reality, with two production sites, for a total of seventy hectares directly controlled and six thousand square meters of winemaking, refining, bottling, and marketing facilities. Also in this case the role of a woman, Attilia, Sergio's wife, was fundamental, and was the only shoulder on which he could count at the beginning of his activity.
Since the end of the eighties the Balan group has launched itself into the business of distributing great Italian and foreign wines. This new activity has joined the production, which has never ceased to give excellent results both in terms of numbers and quality.
The work of four generations, the continuous effort towards innovation, the synergy between production and marketing, agreements with prestigious partners and, more than anything else, an inexhaustible passion for wine, have made Balan one of the protagonists of this world in Italy.
