Tasting notes
A deep red colour with purple highlights. Intense violet aromas, followed by fresh notes of gourmet redcurrant reminiscent of the Cabardès climate. Fresh and peppery on the palate, with an iodised finish.

Maturing: Concrete vats
Maceration: 20 days between fermentation and vatting
Extraction: Pigeage followed by 1 pumping over each day until 1030. Post-fermentation maceration at 35°C for 5 days

Winery Description
Maison Ventenac, taken over in 2011 by Olivier and Stéphanie Ramé (founded in 1973 by Stéphanie's parents), is determined to desacralise wine and offer everyone the simple pleasure of "sharing a barrel". This simplicity is reflected in the vinification: indigenous yeasts and ageing in the most neutral containers possible. The whites and rosés are matured in vats and the reds in terracotta jars to allow the fruit to express itself. However, we sometimes use our imagination to vinify in old tuns, for example, without altering the quality of the grapes. Organic viticulture is a matter of course for Maison Ventenac, to respect biodiversity. The range of wines produced by the Maison Ventenac is an attractive palette of single-vineyard wines, simple and authentic, and more complex blended wines.
The Maison Ventenac vineyard is located in the heart of the Cabardès, in the Aude department, overlooking the town of Carcassonne and facing the Pyrenees. It covers 130 hectares. Southern and Atlantic grape varieties flourish wonderfully in the soil around the commune of Ventenac. These stony soils of marl and limestone allow optimal ripening and bring a salty, chalky aspect to the wines of the House.
