Tasting notes
Aromas are very fresh but with red fruits, blueberries, plums, cherries, blackcurrants and black currants to spicy notes such as cinnamon and white pepper. Lightness of schist tannins, gentle and easy drinking,
Very good balance. Texture is velvety and smooth, ranging from dark fruit to sweet vanilla and spice. Complexity, fleshy and persistent.

Viticulture
Gobelet pruning. Hand harvest.
Vinification
Total destemming. Cold maceration for 4 to 5 days before fermentation. Alcoholic fermentation at 25 °C with cap punching and pumping over three times a day. A hot maceration is carried out after fermentation. Ageing 14 months in barrels (25 % new) and in vats.

Winery Description
Brigitte Chevalier came to Faugères to make wine in her own, highly individual way. In a short space of time, her organically farmed estate of 11 hectares has established itself as a leader within its chosen appellation and a highly rated name within South of France winemaking circles.
She hunted down and bought the parcels that met her objectives, choosing them on the basis of the quality of their terroir and their grape varieties, their exposure (north-facing, for balanced wines) and altitude (300 metres, in the foothills of the Massif Central), in Faugères, in the heart of the Haut-Languedoc Parc Naturel.
She wants to capture the style and delicate flavor of cooler-appellation wines in the Languedoc. Domaine de Cénène terroirs, combined with deep-rooted vines, very low yields, grapes hand-picked at optimum ripeness and careful vinification give Brigitte’s organic wines a unique profile.
Domaine Cébène‘s name refers to the Languedoc goddess who inspired the area’s name Cévènnes.
