Tasting notes
Intense, complex and delicate dark fruit bouquet with notes of mint and sandalwood. A beautifully rich and pure fruit on the palate balanced by an extraordinary freshness.

Lamb, pork shoulder or hard cheese.
Terroir
Clay-limestone in Mas de la Done.
Viticulture
Organic farming. All viticultural work done by hand. Hand harvest.
Vinification
Traditional fermentation in open demi-muids (500l) for 30-40 days with daily manual punching down for 15 days. Indigenous yeast. Ageing in old demi-muids for 18 months without lees stirring. No fining or filtering.

Winery Description
Wilfried Walt, a former student in biochemistry in Montpellier and in oenology in Dijon, started his domaine in 2007. He bought 5 hectares of old vines about to be uprooted near Calce, at the Done pass (Col de la Done). His farming is organic, respectful of the environment. His winemaking is modern, with cold pre-fermentation maceration and soft extraction. Wilfried is implementing in Roussillon, to local grapes (Carignan, Mourvedre), what he has learnt in Burgundy while working at Meo-Camuzet and Joblot. The results are fresh, delicate and elegant wines.
