NOSE : Complex, subtle, eucalyptus aromas, blackburrant buds aromas, blackcurrant aromas, spice aromas, clove aromas, leather aromas, beeswax aromas, leather aromas.
PALATE : Crunchy, ethereal, buttery, eucalyptus hints, blackcurrant hints, spice hints, full-bodied tannin, smooth, slightly mineral, light body, discreet intensity, good length.

Winery Description
The estate, created in 2003, is located at the South part of Rhône Valley on the Sarrians’ Garrigue plateau. The 57.5 Ares offer 4 different appellations including 3 colors in Vacqueyras. In 2009 the estate became officially organic.
The Terroir
There is 7 Ares clay-limestone with rocks soil which allowed the Grenache grapes to fully express itself.
Grapes
The first white grapes were planted in 2002 and 2005, now the estate can produce high quality Vacqueyras white wine, which is uneasy to find in Japan. The estate is mainly made of Grenache (50%) and Syrah (30%) but there is also some Cinsault, Mourvèdre, Roussanne, Bourboulenc, Viognier, Grenache blanc et Clairette.
The wine making process
Jérémy doesn’t use any chimicals in his cellar, neither in the vineyard to let the grapes and the terroir express itself as much as possible. In 2015 the estate purchase wooden and stainless-steel cone-shaped tank, which allowed to make a plot vinification.
Jérémy Onde
Before fully dedicate himself to making wines Jérémy was working as head of marketing in a French famous cloth brand. As the call of the countryside was too strong to ignore, he left everything to dedicate himself to Domaine Les Ondines (that he created himself). The passion starts when he used to carry his father’s grapes to the magician, who bought everything, and helped to the wine making process at the cellar.
